1/4 cup pumpkin puree
2 tbsp nonfat cottage cheese
1 cup water
1/2 tsp vanilla extract
1/2 cup old fashioned oats
1/4 tsp baking powder
Dash sea salt
1 tsp cinnamon
1/8 tsp allspice
1 piece crystallized ginger, crushed
Combine all wet ingredients together in a mixing bowl. Mix dry ingredients, except ginger, in a separate small bowl. Mix dry ingredients with the wet ingredients. Stir in crystallized ginger. Bake in an oven proof dish at 350F for 30 minutes
